On Christmas morning I wanted to give my family a special breakfast, but, since we are trying to pay-off our debt doing something with expensive ingredients or eating something from a restaurant was out of the question. So, I opted to attempt a Casey’s Breakfast Pizza at home. If you are from the mid-west you probably know the deliciousness of which I speak. For those of you not from the mid-west, Casey’s is actually a gas station that serves some pretty good pizza, in many small towns it is the only take-out pizza available. Casey’s breakfast pizza and Casey’s taco pizza are, in my opinion, the BEST.
If you are cutting back but still want some of that cheesy deliciousness, here is a recipe for you.
I used a large baking sheet for my pizza as I made it for a family of five.
I used this dough recipe but I added an extra tsp of salt.
Can of cheese sauce.
Toppings. I used green pepper and onion but you can also use bacon and/or sausage.
First if you are making your dough you’ll want to get that prepared.
Scramble up some eggs! For our family I used 11 eggs.
You’ll also want to prepare your toppings at this point. While the eggs were cooking I chopped up our veggies. If you are using bacon or sausage you will obviously want to cook that as well.
Now, spread on your cheese sauce! (After your crust is prepared of course). I would have preferred a can of cheddar cheese, but when I purchased the ingredients the store was out! I used the nacho cheese instead and it still turned out good…still kinda wish I had the cheddar though.
Spread your eggs over the cheese evenly.
Throw on your toppings.
Sprinkle on your mozzarella. For a pizza this size I used about 3 cups…Casey’s pizza is notoriously a little cheesy.
Throw on some cheddar.
Now bake at 400 degrees for 20-24 minutes. Until the edges of the crust are slightly browned.
Let the pizza rest for about 5 minutes then serve and enjoy!
After eating a meal like this I might suggest taking a walk! After we ate breakfast on Christmas day we headed out to one of the trails in town and took an hour stroll. The pizza and walk made for a really nice Christmas morning.
